Italian Stew

  • 1 LB Hot Italian Sausage
  • 1 Small Onion, Chopped
  • 1 Clove Garlic, Minced
  • 4 Cups Beef Broth (One box is four cups. I checked cuz I didn’t know)

Strawberry Cream Cheese Cobbler

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 quarts whole strawberries, capped and washed
  • 4 ounces cream cheese, cut in small pieces

Roasted Head of Cauliflower

  • 1½ cups plain Greek yogurt
  • 1 lime, zested and juiced
  • 2 tablespoons chile powder
  • 1 tablespoon cumin

  • 1 teaspoon curry powder
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper

Baked Chicken Country Captain

While searching for quick(ish), healthy recipes using fresh ingredients, I came across this one. It’s apparently a traditional dish simmered on the stove using whole chicken pieces and a boatload of not-so-healthy stuff. I used boneless chicken breasts and made some other mods to come up with this, which was pretty dang good if you axe me.

Banana Walnut Bread Pudding

I haven’t tried this one yet. When I do I’ll add comments and modifications, if any. Typical Emeril recipe that has about a bazillion ingredients.
  • 5 tablespoons unsalted butter
  • 8 cups day-old white bread, such as French or Italian, cut into 1-inch cubes (toast if fresh)
  • 2 cups heavy cream

Pear Upsidedown Cake

I made this in a 12 inch cast iron skillet. If you have a smaller one, cut the recipe down or just use the excess for something else. Some of the instructions are kind of vague because I made this up as I want along from bits and pieces of other recipes.
